Veggie Breakfast Idea

Just to make an everyday life a bit easier, I usually keep these pre-made roasted rosemary vegetables in the fridge for later use. They are easy to use and super nutritious for breakfast, lunch or as a side-dish for dinner. Roasted veggies will last about 4-5 days in the fridge. For this breakfast, I only added some eggs, nuts and parmesan cheese to make it as a full meal.

Ingredients

  • Roasted vegetables (broccoli, cauliflower, sweet potatoes)
  • Baby Spinach
  • Eggs, free-range
  • Walnuts
  • Parmesan cheese

Instructions

  1. Cook the egg and add the spinach and pre-made roasted vegetables to heat up on the side.
  2. Place ingredients on the plate and add some walnuts and seasoning.
