Raw Cheese Cake, Blueberry

Super nutritious dessert with blueberries, almonds, healthy coconut oil and other delicious ingredients.
Super easy to make and only needed a good blender to make the filling smooth enough.

  • 3 dl=1,2c almonds
  • 1 dl=0,1c sunflower seeds
  • 2 dl=0,8c=150g dates, soaked about 30min in small amount of water (remove the seeds)
  • 0,5 tsp vanilla extract or 1 tsp vanilla powder
  • hint of ceylon cinnamon and salt
  • 500g blueberries (melted or fresh)
  • 2dl=0,8 c almond milk
  • 5dl=2 c cashew nuts (soaked 1/2 - 1h in water)
  • 2 pcs bananas
  • 1 dl raisins (soaked 1/2 - 1h in water)
  • 1dl=0,4 c almond flour
  • 1 tbsp soy lecithin, organic (emulsifier, used for thickening)
  • 0,5 tsp vanilla extract or 1 tsp vanilla powder
  • juice of two big lemons
  • 1tsp lemon peel
  • hint of salt
  • 2 tbsp organic coconut nectar (or honey)
  • 2dl=0,8 c coconut oil


  1. Mix the base ingredients together with a full power food processor until the nuts and seeds are finely chopped. Add the dates and blend as well as possible. Continue blending with spoon if the food processor fails.
  2. Add the base to the bottom of a cake mold (use greaseproof paper or coconut oil to prevent sticking).
  3. Mix all the filling ingredients, except coconut oil, in a blender until very smooth. You can start with only cashews and almond milk to make it easier for the blender.
  4. Lastly add melted coconut oil into the filling, blending mildly to prevent too quick thickening.
  5. Place the filling on the top of the base and put the cake into a freezer for at least couple of hours before serving.
  6. If you keep the cake in the freezer over night, make sure to take it out couple of ours before serving to make sure it softens for cutting. Best way to cut the cake is to use heated knife (hot water).
  7. I love to squeeze some lime or lemon juice on the top of the cake just to add a hint of perkiness.
