Energy Bites – Lemon (gluten-sugar-free)

I’m so excited about my new Energy Bites flavours! Earlier I made a post about Gingerbread Balls, but now it was time to more fresh flavours since the spring is on its way. There are 2 new flavours, Strawberry-Liquorice and Lemon. They contain a lot of energy – good fats and protein. I consider my son as my best juryman as he is very picky about the things he eats and likes. But as an eleven-year-old, he is old enough to give me a sophisticated and honest opinion about my creations. This time he liked, so it’s a winner!

Energy Bites – Lemon

  • 30g Virgin Coconut oil
  • 200g Organic Dates OR Raisins (pitted and soaked for at least 30 minutes)
  • 1dl=0.4c Sunflower seeds
  • 1dl=0.4c Cashew nuts
  • 2dl=0.8c Almonds
  • 0.5 teaspoon Vanilla extract or 1 teaspoon vanilla powder
  • 1/4 teaspoon Himalayan Salt
  • 1-2 teaspoon Lemon peels, organic
  • few drops Lemon extract
  • for coating: peeled hemp seeds or lemon peels


  1. You can either melt the coconut oil in a microwave (30s) or place it in a small, heat-safe cup or bowl. Then place the cup or bowl in a shallow pan containing a small amount of hot water (nearly boiling) and wait until the coconut oil is melted.
  2. Chop the nuts and seeds in a food processor as smooth as possible. Then add the lemon peels and a few drops of lemon extract.
  3. If you have a quality food processor, you can add the soaked dates (not the soaking water) and the melted coconut oil at once and mix. I usually mix the dry ingredients and dates separately and then mix it all together with a spoon or hand. (This can all be done without an appliance but then you need a traditional mortar to crush the seeds and nuts.)
  4. Make round balls of the mixture with your hands (about 18-20 pcs).
  5. Coat the energy balls with peeled hemp seeds or lemon peels.
  6. Store in the fridge or in the freezer for later use.
