Date Cake – No Added Sugar, Gluten-Free

My favourite treat for Christmas and New Year’s Eve is definitely a date cake that only gets better during the holidays. The smell of a fresh baked date caked is just mouth watering! It’s also one of the easiest dessert recipes to make – no raising or rolling the dough. This date cake composition is far from dry but instead moist, soft and full of delicious dates. As all my recipes this treat doesn’t contain any added sugar or grains. So the date cake / muffins are gluten-free and the sweetness comes from dates and organic stevia.

Ingredients

  • 250g Dates, organic and pitted
  • 200g Grass-fed butter
  • few drops of Stevia, organic (I put 20 drops of vanilla flavoured steviol glycosides)
  • 3dl=1.2c Water
  • 2 Eggs, pasture-raised
  • 0.5 teaspoon Organic Vanilla Extract
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ceylon cinnamon
  • 1 teaspoon Cardamom
  • 3.5dl=1.4c Gluten-free flour mix for cakes

Instructions

  1. Preheat the oven 175°C=350°F.
  2. In a saucepan, combine water and pitted dates. Bring to a boil and cook for 5 minutes until the dates are pureed. Remove from heat.
  3. Add in butter and stevia drops. Set aside and let it cool down.
  4. Add eggs and stir. Finally combine with a mixture of dry ingredients.
  5. Pour into muffin cups or into a cake mold (grease and flour).
  6. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove cake from oven.
