Apricots are chock full of fibre, vitamin A and potassium. Vitamin A is important for normal vision, proper immune system function, reproduction, and maintaining healthy skin, teeth, and skeletal and soft tissue. Potassium is a mineral and electrolyte that helps you maintain proper fluid balance, aids in muscle function, and helps regulate heartbeat for example.


Dates can improve digestive health and treat and prevent anaemia. It’s helpful for bone, blood and immune system health, energy boost and heart health.

Nut and seeds have essential fatty acids and are high in protein, they are also chock-full of antioxidants and high in fibre which helps boost your metabolism.

  • 1 dl=0.4c Almonds
  • 1 dl=0.4 Sunflower seeds
  • 2 dl=0.8c Cashew nuts
  • 200g Dates, organic (soaked for at leas 30 minutes)
  • 30g Virgin coconut oil
  • 4-5 pcs Apricot, dried and organic
  • pinch of Himalayan salt (optional)


  1. You can either melt the coconut oil in a microwave or place it in a small, heat-safe cup or bowl. Then place the cup or bowl in a shallow pan containing a small amount of hot (nearly boiling) water and wait until the coconut oil is melted.
  2. Chop the nuts and seeds in a food processor as smooth as possible. Then do the same for the dates (pour out the soaking water first) and combine all the ingredients with a spoon or in the food processor. (All this can all be done even without an appliance but then you need a traditional mortar to crush the seeds and nuts.)
  3. Chop 4-5 apricots into small pieces and stir them into the mixture using a spoon or a spatula.
  4. Press the mixture into a square container and spread it evenly by using a spoon. I choose a container where I get about 1.5cm (0.6in) thick layer.
  5. Store in the fridge or in the freezer for later use. Cut into bars when solidified.
